#TastyTuesday Brighter Bites Cauliflower Ceviche

Cauliflower Ceviche

Nutrition Facts for One Serving (Approx. 1 Cup, Makes 8 Servings):

154 calories; 14.2 grams carbohydrate; 11.2 grams fat; 3.4 grams protein; 7.4 grams dietary fiber

Ingredients:

  • 1 head cauliflower (about 5 cups chopped)
  • 6 Roma tomatoes, finely chopped
  • 3 avocados, chopped
  • Juice of 4 limes
  • ¼ cup chopped red onion
  • ½ jalapeño, deseeded and finely diced
  • ¼ cup finely chopped cilantro
  • 1 tsp garlic powder
  • 1 ¼ tsp salt
  • ¼ tsp ground black pepper

Directions:

Chop the head of cauliflower into florets. Bring a pot of water to a boil and drop the cauliflower into the water (or place in a steam basket). Cook for about 5-7 minutes, or until tender. Remove cauliflower from the pot and place in an ice water bath for one minute. Remove with a slotted spoon and finely chop. Place the chopped cauliflower in a large mixing bowl. Add the tomatoes, avocados, lime juice, red onion, jalapeño, cilantro, garlic, salt, and black pepper. Place the ceviche in a closed container in the fridge and allow to sit for the flavors to combine. Serve with baked tortilla chips.

Ingredientes:

  • 1 cabeza de coliflor (approx. 5 tazas, picado)
  • 6 tomates romanos, picados finamente
  • 3 aguacates, picados
  • El jugo de 4 limones verdes
  • ¼ taza de cebolla morada picada
  • ½ jalapeño, sin semillas y finamente picado en cubitos
  • ¼ taza de cilantro finamente picado
  • 1 cucharadita de ajo en polvo
  • 1 ¼ cucharadita de sal
  • ¼ cucharadita de pimienta molida

 

Preparación:

Corte la cabeza de la coliflor en floretes. Ponga a hervir una olla con agua y eche la coliflor en el agua (o coloque en una ceste para vegetales al vapor). Cocine por aproximadamente 5-7 minutes, o hasta que se ablande. Retire la coliflor de la olla y colóquela en agua helada por un minuto. Retire con una espumadera y pique finamente. Coloque la cliflor picada en un bol grande. Añada los tomates, aguacates, jugo de limón, cebolla morada, jalapeno, cilantro, ajo, sal, y la pimienta negra. Mezcle los ingredientes hasta que queden bien revueltos. Coloque el ceviche en un envase cerrado en el refrigerador y deje reposar para que los sabores se combinen. Sirva con tortilla chips horneados.
